This menu offers a delightful blend of Caribbean flavors with gourmet touches. The Oxtail Rangoon combines tender braised oxtail and cream cheese in a crispy wonton with mango pepper jelly. The Lobster Salad Farced Shrimp features shrimp stuffed with a refreshing lobster and cucumber salad. The Conch Confit pairs cracked conch with layers of confit potatoes and a sweet-spicy calypso sauce.

For a light refreshment, the Guava Passion Lime Sorbet delivers a tropical mix of guava, passion fruit, and lime. The Mutton et Bourbon Coconut presents grilled chicken in a rich bourbon coconut salsa. The Grouper Truffle Mac ‘N’ Cheese offers crispy grouper with creamy four-cheese truffle mac. The meal concludes with Peach Cobbler Cheesecake, blending spiced peaches with smooth cheesecake for a sweet finish.
